Blueberry Frozen Yogurt Pie

INGREDIENTS

Blueberry Frozen Yogurt Pie

Fat-free vanilla frozen yogurt, such as Stoneyfield or Colombo (only 100 calories and 0 grams fat/half cup)
2 pints fresh or frozen blueberries,
1/4 cup Splenda,
2 Tbsp. cornstarch
2 Tbsp water
1 Tbsp. lemon juice

DIRECTIONS

Soften and spoon frozen yogurt into graham cracker crust. Freeze. In meantime, in a medium saucepan, bring to a boil your mix of the frozen blueberries with the necessary ingredients. Remove from heat once thickened. Refrigerate. Slice pie and top with blueberry topping.

Ice Cream Parfaits

INGREDIENTS

Ice Cream Parfaits

Any low-fat churned ice creams
Chopped fresh fruit (peaches, nectarines, berries, melon, etc)
1 Tbsp of whipped cream

DIRECTIONS

Choose any of the low-fat churned ice creams above and layer with summer fresh fruit in a parfait glass (peaches, nectarines, berries, melon, etc). Top with 1 Tbsp of whipped cream.

Frozen Frappacino

4 one-cup servings

This decaf icy coffee drink is a perfect treat. While it tastes great, it also supplies lots of calcium, vitamin D, omega-3 fats and B vitamins.

INGREDIENTS

Frozen Frappacino

1 cup vanilla omega-3-enhanced soy milk
1 1 /2 cups frozen fat-free frozen yogurt (chocolate or vanilla flavored),
1 /2 cup cold, strong decaffeinated coffee
2 cups crushed ice
1 scant teaspoon almond extract
4 tablespoons fat-free, dark chocolate syrup.

DIRECTIONS

In a blender, whirl all ingredients except the chocolate syrup. Blend until thick and creamy. Pour into four glasses. Add 1 tablespoon chocolate syrup to each prepared glass. Stir to mix.
